Loving Summer

It is such a treat to be able to go out in the garden & pick fresh vegetables to use for cooking.  I love the summer for the Indiana tomatoes especially.  Last summer we had a drought.  This summer it is back to plenty.  The squash & zucchini are rampant and ginormous!  The tomatoes are everywhere & in every shade of red & orange you can imagine.  We made a wonderful yellow squash casserole that I can't stop eating.  Mom made a great crunchy pasta salad.  Dad made a bulgar wheat salad with tomatoes & cucumbers.  We also made potato salad with fresh dill, cucumbers & sweet onions in vinegar, & a summer tomatoe pie with bacon, cheese, & sweet onions in a pie shell-scrumptious!!  The garden this year makes it easy to imagine being a vegetarian.  The huge amout & size of the zucchini make me think that zucchini bread is in my future.  As a chef I am so happy to have all kinds of edible garnish out there whenever I need it.  There is oregano, green & purple basil, three kinds of sage, rosemary, parsely, dill, tarragon, wild lettuces, & mint.  There is also lavender which I love to make syrups out of for any fresh fruit.  It is just delicious & unique.  So many variations and unlimited creativity just outside the back door.  Wish it could always be summer in Indiana.
